You Will Need
30g melted butter, 30g Greek yogurt, 40ml vegetable oil, 100ml whole milk, 1 gg and 50g blueberries (optional)
Baking Instructions
1. Preheat oven to 180C (non-fan assisted). Line a 6-cup muffin pan with muffin liners. Set aside.
2. Combine butter, yogurt, oil, milk, then egg in a mixing bowl. Slowly add muffin mix and whisk until just combined. Stir in mix-ins gently.
3. Pour batter into muffin liners until 2/3 full and bake for 20 to 25 minutes or until the tops are slightly golden brown. Cool for 10 minutes before serving.
